Giant Chewy Oatmeal M&M Cookies

Things have been so quiet around here and I would like to apologize, but since I’ve been spending my time cuddling the world’s cutest baby instead of posting I’m kind of sorry not sorry. One day I hope to be able to better balance baby cuddling time with food blogging time, but until then, can I make it up to you by sharing a picture of the world’s cutest baby?

Are still trying to decide what kind of cookies to leave out for Santa? Can I make a suggestion? How about these Giant Chewy Oatmeal M&M Cookies? They are soft, chewy, giant, with the perfect touch of crunchy M&M chocolate. The oatmeal isn’t overwhelming, but it adds a nice texture to the cookies.

 

 

 

Pumpkin Oatmeal Muffins

Fall is FINALLY here!! I do not think that I am alone in saying that it is my favorite season. Especially now that I am back in an area that actually has real seasons. The air is getting a little cooler and the leaves are starting to change colors. I’ve even busted out a few sweaters! But, even more than cool weather, colored leaves, and sweater, what I love the most about fall is probably the food. Warm stews and soups, apple cider, and, of course, PUMPKIN! Judging by the view of my blogs Pinterest page, I am not the only person excited about baking with pumpkin again.

To be perfectly honest, I did some premature pumpkin baking this year. These muffins were actually a part of my great pre-baby freezer stocking! . I waited to post the recipe because I wanted to see how they held up to freezing and reheating after a month. I am happy to report that these froze and reheated beautifully.  There really was no sacrifice in flavor or texture after hanging out in freezer bag for a month. Anytime I wanted a delicious, easy, one-handed snack, I would just grab one of these out of the freezer and pop it in the microwave for 30 seconds and boom! You pretty much have a freshly baked muffin! Perfect for first time parents of a newborn, busy parents of back-to-school children, or busy people with no children!

Peanut Butter Oatmeal Cookies with Chocolate Chips

Well hello there readers! What is this you see? An actual recipe?! Yep! While we’re still not 100% settled in to Ohio, I am starting to come up for air and finally getting around to posting!

One wild Friday night Jesse and I were watching TV and suddenly I just had to make cookies. (The baking bug likes to bite on weekends) So, I walked over to my baking cabinet to see if any ingredients jumped out at me. Immediately I was drawn towards a can of old fashioned oats and a jar of peanut butter. It was clear to me that I would be making Peanut Butter Oatmeal Cookies. After a brief search online I found a recipe that seemed like a good fit. I made a few small adjustments and the end result was delicious. Thick and rich with a great texture thanks to the oatmeal.

Now I just have to patiently wait for our U-haul U-box to arrive so I can get back to wild Friday night baking!

Yesterday (well, today as I write this, yesterday as you read this) was moving day! All I can say is thank goodness we hired movers and thank goodness they were so patient with the obstacle course that is my new apartment (technically condo) complex! I also have to say thank goodness for thefantastic friends I’ve made through blogging! Today my guest poster is Jessica, from My Baking Heart. Just a few weeks ago I participated in a virtual wedding shower in her honor. Her wedding is just around the corner so I can’t tell you how lucky I feel that she made time to guest post for me! Happy Friday, Sunny Side Up readers! Another Jessica here, from My Baking Heart! What an super honor it is to guest post for my sweet friend today. Besides the fact that she has the most amazing name on the planet, she’s one of the sweetest gals I’ve ever had the pleasure of meeting and I’m so happy that she and Jesse are back in the states!

Since she’s driving cross-country at the moment, I baked up a batch of these ‘Caramel Oatmeal Chewies’ for you to enjoy. They’re a perfect little treat for the cooler temps, changing colors and every little loveliness that Fall encompasses. Although, I believe they’re the best straight from the oven (with those tiny melting bits of caramel), they’re still pretty great warmed up in a microwave for the next morning’s breakfast. Grab a cup of joe and a plate full of these and you’ll be in heaven!
