Chocolate Chunk Peanut Butter Cookies

I sure hope you’re ready for some cookies, because I’ve got a weeks worth coming your way! Just like last year, I’m going to be sharing a new cookie recipe every day this week.

To kick start the week, I bring you Giant Chocolate Chunk Peanut Butter Cookies. When Jesse came home and saw these cookies on the counter I even heard him say, “Wow, these cookies are huge!” It may not come across perfectly in the photo, but they are!

These cookies are a bit drier than the typical peanut butter cookie recipe that I use, but that provides a sturdier cookie base that won’t spread and is over an inch thick. Of course, the best part of the cookie is the chocolate. Basically a full pound of giant chunks of semi-sweet chocolate. Yes, Santa will require a full large glass of milk with these cookies.

 

 

 

Tis the Season

Starting Monday I’m going to be dedicating a whole week to Christmas cookies and treats. I can already feel my waistband tightening. Mmmmm….

Guest Post: Mapledoodles

Happy Hump Day! If you can believe it, I finally have my entire kitchen unpacked and plan to get baking tomorrow! It’s been a wild ride over the last few weeks and I’m about ready to settle back into some normalcy. As I emerge from the chaos, I have one more friend helping me out with a guest post! Kelsey is the amazing woman behind the food blog Apple a Day. We haven’t yet had a chance to meet “in real life”, but I really hope we correct that problem in the very near future because she is such a sweetheart! She herself has just recently moved and has been traveling, so it means that much more that she is helping me out! As for her blog, she is well known for these amazing chocolate chip cookies (which I promptly made just a few hours after she originally posted it!), but some of my other favorites include her Meatless Monday posts, especially this Pasta with Roasted Vegetables. Good morning, Sunny Side Up readers! I am so glad to be here with you today, especially given the wonderful circumstances for Jessica. I know she really enjoyed her time in China and made wonderful friends there, but nothing compares to the feeling of being home with the ones you love.

I can only imagine how busy Jessica must be making the rounds to visit everyone, get her new digs unpacked and set up, and sneak in some snuggle time with her kitties she missed so very much. Cooking probably isn’t a top priority at the moment. Heck, it might not even be possible!

But Jess, I’ve made these just for you. I remember when I moved and had my kitchen semi set up. Cookies were one of the first things I baked. I didn’t have to locate too much equipment and I didn’t need all that much counter space to operate. I wanted you to have something with all the glorious flavors of fall. I wanted it to be something that would immediately make your new place smell like home while baking. I wanted something simple enough to make in a new kitchen and I wanted you to be able to nibble on it, one-handed, while unpacking. I hope you like these.

Yesterday (well, today as I write this, yesterday as you read this) was moving day! All I can say is thank goodness we hired movers and thank goodness they were so patient with the obstacle course that is my new apartment (technically condo) complex! I also have to say thank goodness for thefantastic friends I’ve made through blogging! Today my guest poster is Jessica, from My Baking Heart. Just a few weeks ago I participated in a virtual wedding shower in her honor. Her wedding is just around the corner so I can’t tell you how lucky I feel that she made time to guest post for me! Happy Friday, Sunny Side Up readers! Another Jessica here, from My Baking Heart! What an super honor it is to guest post for my sweet friend today. Besides the fact that she has the most amazing name on the planet, she’s one of the sweetest gals I’ve ever had the pleasure of meeting and I’m so happy that she and Jesse are back in the states!

Since she’s driving cross-country at the moment, I baked up a batch of these ‘Caramel Oatmeal Chewies’ for you to enjoy. They’re a perfect little treat for the cooler temps, changing colors and every little loveliness that Fall encompasses. Although, I believe they’re the best straight from the oven (with those tiny melting bits of caramel), they’re still pretty great warmed up in a microwave for the next morning’s breakfast. Grab a cup of joe and a plate full of these and you’ll be in heaven!
