Baking Something Special

Remember those Sugar Cookie Bars I posted last month? Well those aren’t the only sweet thing I’ve been baking lately….

That’s right! Jesse and I are expecting our first child!! I am just over 17 weeks pregnant and feeling pretty good. The first trimester came with some food aversions, heavy carb cravings, and lot more eating out than I like (hence the less frequent blog updates) but otherwise I feel pretty good! Hopefully now that I am further into the second trimester and have less food aversions and more energy, I’ll be able to post new recipes more often! For now I just wanted to share the happy news with you. Happy Friday!

*The cookies in the photo are cutouts using the Sugar Cookie Bar recipe I posted last month and the frosting is Fluffy Vanilla Frosting, which I like because it’s not too sweet. 

 

Spicy, Sticky, Sweet, Asian Meatballs

The first time I made these I just sort of threw them together, I didn’t take great notes and I didn’t get a picture. Of course Jesse loved them (and so did I) and said they had to go on the blog, so I had to do my best to recreate them. The second time they turned out even better than the first and we’ve since had them twice in a month. That’s a sure sign of winner in our house.

I wanted to call these “Hot, sticky, sweet” Asian meatballs. You know, after the song. But Jesse thought it sounded better with all S’s, so Spicy, Sticky, Sweet Asian Meatballs they are. Either way, it’s the best way to describe these. The chili garlic sauce gives the sauce a nice heat, which is also carried through in the meatballs. But the spicy flavor is balanced out with the sweet, sticky sauce and pop of fresh ginger.

In non-food related news, I’m headed to Boston tomorrow! What’s in Boston? The Irish Dancing World Championships, that’s what! I get to see my dance family that I’ve missed so much AND I get to watch my cousin dance in her first solo worlds competition. I couldn’t be more excited! I’ll let you know how it goes!

Nacho Burgers

Oozy nacho cheese sauce, jalapenos, and salsa. Need I say more? What if I put it on top of juicy burger and between two fresh, buttered, brioche hamburger buns? Did you drool a little? Because I did when I first saw this burger on the cover of Food & Wine. This burger is the sort of thing my dreams are made of.

After drooling over the photo on the cover of the magazine for almost a year, I finally made it for myself this weekend. I have to say, it was just as delicious as I thought it would be. Of course I did make a few small changes. First, the tomatoes at my grocer looked really pathetic, so rather than making my own salsa I bought some of the good pre-made stuff  from the refrigerated section (the kind in the plastic tub with flecks of real fresh cilantro and onions). I also added a dash of Worcestershire sauce and hot sauce (Cholula) to the burger meat.  Mmmm!
